Whenever I work in Downtown LA, I usually always get the same lunch- this amazing spinach salad from “Anson’s Eatery”. I had an intense craving for this salad today after my workout, so I decided to make my own version. To my surprise, it came out even better than the original and will definitely be a new staple in my diet! I hope you can enjoy it as much as I do xx
Better Than Anson’s Salad Recipe
- 2 cups baby spinach
- 1 hard boiled egg (I always use organic free-range eggs)
- 1 handful raw walnuts
- 1-2 Tbsp’s sundried tomatoes
- 1/4-1/3 cup peas
- homemade honey mustard dressing (recipe can be found here)
