When I am working during the week, have school, or both, I always make sure to prepare my lunches for the week the Sunday before. I usually always take salads, and I change them up every week in order to not get bored! I thought I’d start sharing these simple recipes with you all, so you can prepare them for yourselves as well.
This week IÂ came up with this chicken salad in the spur of the moment and it turned out delicious- hope you love it!
Asian Chicken SaladÂ
- 1/2 cup chopped romaine lettuce
- 1/3 cup thinly sliced purple cabbage
- 1/2 mango, thinly sliced
- 1/4 avocado, sliced
- 1/4 cup thinly sliced jicama
- a few pieces leftover chicken breast, chopped (I used my honey-glazed chicken breast; recipe can be found on my Instagram!)
Asian Dressing
- 2 Tbsp’s apple cider vinegar
- juice of 1/2 lime
- 1 tbsp sesame oil
- 2 tsp’s tamari soy sauce
- 1 tsp agave
Mix all ingredients with salad and enjoy!
