I am obsessed with roasted veggies, and I always make some throughout the week to add to my salads or to have as a side with my dinner. Cauliflower has to be one of my favorites, and I am always experimenting with new ways to roast or cook it! This week, I came up with this Roasted Curried Cauliflower that I hope you will all enjoy
Ingredients
- 1/2 cauliflower, chopped into small pieces
- 3-4 tbsp.’s avocado oil
- 1/2 tsp curry powder
- 1/2 tsp turmeric powder
- salt, pepper, garlic powder, and cayenne pepper to taste
Preheat oven to 350 degrees Fahrenheit. Then, simply lay the cauliflower out on a baking dish/pan. Sprinkle with spices and drizzle with the avocado oil. Put the pan/dish in the oven for about 30-35 minutes. Remove and enjoy!
