The perfect easy lunch or snack, this bowl is a staple in my diet. I hope you enjoy it as much as I do!
Recipe
- 1/4-1/3 cups cooked quinoa
- 1/3 cups cooked black beans
- 1/3 cups corn
- 1/2 chopped avocado
- handful chopped tomatoes
- 2 chopped celery stalks
- chopped mini carrots (optional)
- chopped cilantro for garnish
- 2 tbsp’s apple cider vinegar
- juice of 1/2 lime
- salt, pepper, garlic powder and cayenne pepper to taste
Mix all ingredients together and serve with chips and salsa 🙂
