Sautéed Sweet Potatoes with Pecans
- 3 Sweet Potatoes
- 1/2 white onion
- 4-5 Tbsp’s coconut oil
- 1/4 cup raw pecans
- himalayan salt, black pepper, and garlic powder to taste
Wrap the sweet potatoes in seran wrap and microwave for 3 minutes to soften a bit. Cut up into cubes and sauté on a pan with coconut oil, onion, and spices. If the coconut oil isn’t enough, add a bit of water as well. When the sweet potatoes are almost ready, add in the pecans and sauté for a few more minutes.
