I had some of my friends over for dinner & drinks last night and decided to get a bit creative in the kitchen. I made a few yummy dishes but this one was my favorite! It’s light and refreshing and the perfect dinner side dish or light lunch- enjoy!xx
Refreshing Quinoa Salad
- 1 cup quinoa, cooked
- 1/3 cup pomegranate seeds
- handful fresh mint leaves, chopped
- handful walnuts
- 1/4 cups goat cheese (I used a honey goat cheese, but you could use any type!)
- 2-3 tbsp.’s olive oil
- 2 tbsp.’s fig balsamic
- salt & pepper to taste
First, cook the quinoa. Then, add it to a large mixing bowl and add in the pomegranate seeds, mint leaves, walnuts, & goat cheese and mix. Add in the olive oil, balsamic, salt and pepper and mix well. Serve and enjoy!
