Healthy Almond Cookies

If you’re craving a desert that is perfectly sweet and almondy (yes, I totally just made that word up)- look no further! These almond cookies are so simple to make and contain only a few ingredients. They’re free of refined sugar and gluten and are absolutely kid friendly. They are super moist and go great with a cup of tea or with some vanilla ice cream. Enjoy lovelies!xx

Healthy Almond Cookies

  • 1 1/2 cups gf oat flour
  • 1 cup quinoa flour
  • 3/4 cups coconut sugar
  • 3 stevia packets (or 4 tsp’s)
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 cup organic butter
  • 2 eggs, beaten
  • 1 tbsp almond extract
  • handful of raw almonds

Preheat oven to 325 degrees Fahrenheit. Grease cookie sheets with coconut oil. Mix flours, coconut sugar, stevia, baking soda and salt in a large bowl. With a fork, slowly add in butter to the flour mixture. Add in the beaten eggs and almond extract and mix until a nice, smooth dough is formed. Shape the dough into small balls and place the balls onto the cookie sheets. Top each cookie with one almond in the center, put cookies in the oven for about 15 minutes, remove and enjoy!
