Cauliflower Fried Rice
- 1/2 bag of cauliflower “rice” from trader joes (or 1/2-1 whole raw cauliflower)
- 2 raw carrots (chopped)
- 1/2 white onion (chopped)
- 1/4 cup frozen peas
- 1/4 cup frozen corn
- 2 eggs
- 2 Tbsp’s coconut oil
- 1 Tbsp avocado oil
- 2-3 Tbsp’s Tamari Soy Sauce
- 2-3 garlic cloves, minced
- himalayan salt, black pepper, and turmeric to taste
First, if you didn’t buy the cauliflower already chopped into “rice”, put your raw cauliflower in a blender or food processor and finely chop until it turns into “rice”. Sauté the chopped onion and carrot in 1 Tbsp coconut oil. Then add in the peas and the corn and some salt and pepper to taste. In a separate pan, scramble the 2 eggs in 1 Tbsp avocado oil, salt, pepper and turmeric and cook until well-done. Transfer the veggie mix into the pan with the eggs, and use the now empty pan to sauté the cauliflower rice in 1 Tbsp coconut oil. Add in the veggie/egg mixture and some salt, pepper, turmeric, soy sauce, and garlic. Keep mixing until fully cooked and enjoy!
