Banana Oat Pancakes

My absolute favorite pancake recipe- I hope it becomes yours as well! xx

Banana Oat Pancakes

  • 1 1/4 cups gluten free oat flour
  • 1 tbsp chia seeds
  • 1 tsp baking powder
  • dash of cinnamon
  • 1/2 tsp sea salt
  • 1 ripe banana
  • 1/4 cup coconut milk (or milk of choice)
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 tsp’s maple syrup
  • 2 tsp’s coconut oil

First, add the first 5 ingredients to a big mixing bowl. Then, add the rest of the ingredients in a blender and blend until smooth. Pour the blended mixture over the dry ingredients and mix with a spoon until smooth. Warm up a non-stick frying pan over medium heat with some coconut oil, and pour 2-3 tbsp’s of the mixture at a time. Cook each pancake on both sides until golden brown and serve with some fresh fruit and your favorite toppings. Some of my favorites are: nut butters, yogurt, coconut yogurt, carob chips, walnuts, shredded coconut, and pumpkin seeds!
