Sauteed Mushroom and Brussels Sprouts with Roasted Pistachios

In honor of St. Patty’s day, I thought I’d share with you all one of my favorite ways to get my greens in! This side dish is one of my staples, and I love serving it with some grilled chicken or salmon.

Brussels sprouts are one of the most popular cruciferous vegetables, which contain important phytonutrients that help protect us against cancer. As well, they are known to help lower cholesterol levels and help us detox unwanted chemicals from our bodies. Mushrooms also contain important phytonutrients that help protect us against cancer, as well as 15 different minerals, vitamins and antioxidants. So instead of that extra bottle of beer this St. Patty’s day, why not celebrate your health with this cancer-fighting side dish?

Recipe

  • 1/2 cup raw Brussels sprouts, chopped
  • 1/3 cup crimini mushrooms, chopped
  • 2 cloves garlic, minced
  • 2-3 Tbsp’s coconut oil
  • salt and pepper to taste
  • 1 handful raw or roasted pistachios

Simply saute the mushrooms and brussels sprouts in coconut oil, and add a touch of water to help soften. After a few minutes, add in the garlic, salt, pepper, and pistachios. Saute for a few more minutes and enjoy!
