Chia Seed Pudding is one of my go-to breakfasts during the week, since it’s easy to prepare the night before and is easy to take on-the-go, especially on the days that I need to be at school at 7:30 AM! I love coming up with new toppings and variations for my chia puddings as to not get bored of eating them, so I thought I’d share three of my favorite variations with you all 🙂
Base- Vanilla Chia Seed Pudding
- 3 tbsp.’s chia seeds
- 3/4 cup coconut milk
- 1 tsp. vanilla extract
- 2 stevia packets (or any other sweetener of choice)
Mix all ingredients together in a small bowl/container and leave in the fridge over night.
Topping Variation #1- Chocolate Strawberry
- 1 tbsp cacao nibs
- 2-3 strawberries, sliced
- 4-5 slices of fresh coconut
- 1-2 chopped dates
Topping Variation #2- Mango Cashew
- 1/3 fresh mango, chopped into little cubes
- 8-10 blueberries
- 1 tbsp pepitas
- 1 tbsp cashew butter
- sprinkle of cinnamon
Topping Variation #3- Tropical Extravaganza
- 1/3 sliced banana
- 5 fresh coconut slices
- 1/2 kiwi, chopped
- 2 tbsp’s pomegranate seeds
- 1 date, chopped
