Mexican Quinoa Bowl



The perfect easy lunch or snack, this bowl is a staple in my diet. I hope you enjoy it as much as I do!


  • 1/4-1/3 cups cooked quinoa
  • 1/3 cups cooked black beans
  • 1/3 cups corn
  • 1/2 chopped avocado
  • handful chopped tomatoes
  • 2 chopped celery stalks
  • chopped mini carrots (optional)
  • chopped cilantro for garnish
  • 2 tbsp’s apple cider vinegar
  • juice of 1/2 lime
  • salt, pepper, garlic powder and cayenne pepper to taste

Mix all ingredients together and serve with chips and salsa 🙂
