Roasted Cauliflower with Pomegranate Seeds and Pistachios Recipe

  • 1 whole cauliflower
  • 1/4 cups pomegranate seeds
  • 1/4 cups raw pistachios
  • 2 garlic cloves, minced
  • 4-5 Tbsp’s olive oil
  • Salt & pepper to taste

Preheat oven to 375 degrees Fahrenheit. Cut up the cauliflower into little pieces and lay out on a baking tray with parchment paper. Mix the olive oil in a little bowl with minced garlic and spread out evenly on the cauliflower. Season everything with salt and pepper and put in the oven for 20 minutes. Remove after 20 minutes and sprinkle with raw pistachios, put in the oven for another 10-15 minutes, remove, and sprinkle with pomegranate seeds. Let cool and enjoy!
