Vegan Banana Date Loaf

This loaf is gluten free, vegan, refined sugar free and filled with fiber and nutritious ingredients. It’s just a tad sweet and is perfect with a dollop of almond or cashew butter and a drizzle of honey. It’s super easy to make and is a great quick snack or breakfast option! Recipe

  • 2 bananas
  • 5 dates
  • 1/2 cup coconut milk
  • 1 tsp vanilla
  • 3 tsp coconut oil
  • 1 cup gluten free oat flour
  • 1/2 cup gluten free oats
  • 2 tsp chia seeds
  • 1/2 tsp baking powder
  • pinch of salt
  • sprinkle of cinnamon

Preheat oven to 350 degrees Fahrenheit. Blend first 5 ingredients together. Mix the rest of the ingredients in a separate bowl. Pour the blended mixture over the rest of the dry ingredients and mix well. Pour batter into a loaf pan and bake for 25-3o minutes. Enjoy!
