Pancakes are my absolute fav meal for breakfast, and I have a ton of healthy pancake recipes, but most of them take forever to make and include flours from grains. I have nothing against healthy grains (like oats, spelt, and buckwheat) but lately I’m trying to reduce my intake since I personally feel better without them. That’s where these chia seed pancakes come in- they don’t contain any grains, they take less than 5 minutes to make, and they are SO fricken delicious.
What’s better than pancakes that only contain 4 healthy ingredients, are insanely easy to make, taste like heaven, and are completely guilt free?! In my opinion, nothing 😉
The Easiest and Yummiest Chia Seed Pancakes
- 1 large ripe banana
- 3 tbsp’s chia seeds
- 2 organic, free-range eggs
- 1 tsp vanilla extract
- 1 tbsp coconut oil or butter (for cooking)
Suggested Toppings: berries, nut butter, and maple syrup
Directions: Blend the banana, chia seeds, and eggs in a blender. Warm a flat pan on your stove, put on some coconut oil or butter, and cook your pancakes! Top with any toppings of your choice and enjoy 🙂
