The most perfect festive breakfast that is low in sugar & carbs and high in healthy fats & fiber- enjoy!
Pumpkin Chia Pudding
- 1/2 cup coconut milk
- 3 Tbsp’s chia seeds
- 1/4 cups water
- 1 Tbsp Pumpkin puree
- 1 tsp maca powder
- dash of pumpkin pie spice
- 3 Tsp’s stevia
- 1 tsp vanilla extract
Soak the chia seeds in all of the ingredients listed overnight, remove from the fridge in the morning and top with some nut butter, pepitas, & blueberries. Enjoy!
