Healthy Fries

I’m a sucker for some good ol’ french fries, and I usually have some most weekends for a treat, but sometimes that just isn’t enough.I could seriously have french fries every day if I could, which is why I came up with this healthier version. This recipe has become a staple in my household for the past few years and I know it will probably become one in yours too!

Recipe

  • 5-6 small potatoes
  • 1 yam
  • 1 sweet potato
  • 1 beet
  • 1 purple sweet potato (optional)
  • 3-4 Tbsp’s avocado oil
  • salt, pepper, garlic powder, paprika, turmeric and nutritional yeast to taste

Preheat your oven to 375 degrees Fahrenheit. Then, simply slice the potatoes, yams, and beets into thin slices, (I usually warm up the yams and sweet potatoes in the microwave for 1 minute before I slice them) lay them out on a pan (covered with a baking sheet), and top with the avocado oil, spices, and nutritional yeast. Bake in the oven for 1.5 to 2 hours, depending on how crispy you like them.
