Oatmeal Raisin Cookies

I made these one late night last week as a result of feeling super upbeat and not being able to sleep. I literally have had to stop myself from eating the whole batch in one sitting ever since! They are the perfect snack or desert and go great with a scoop of vanilla ice cream or simply with a cup of tea or coffee. They are perfect for those cozy fall nights and are the perfect treat to share with your loved ones-I hope you enjoy!

Oatmeal Raisin Cookies

  • 1 cup gluten free oats
  • 1 cup gluten free oat flour
  • 1 handful walnuts
  • 1/4 cup raisins
  • 4 Tbsp’s cashew butter
  • 5 Tbsp’s melted coconut oil
  • 1 tsp baking powder
  • 1/4 cup shredded coconut
  • 1/2 cup coconut sugar
  • chocolate chips (optional)
  • 1 flax egg
  • 4-5 Tbsp’s coconut milk (can add more or less, depending on how soft you want them to be)
  • a pinch of cinnamon and salt

Preheat anĀ oven to 350 degrees fahrenheit. Mix all of the ingredients together in a bowl, shape into little balls, pat down into a cookie shape and place on baking tray (covered with a cookie sheet and some coconut oil). Bake for about 25 minutes, let cool and enjoy!
