• Goji Berry Protein Bars

    I was feelin creative in the kitchen yesterday and spontaneously came up with this yummy treat. This is the perfect afternoon pick me up; It’s filled with protein, healthy fats, and fiber(thanks to the amazing goji berries!) and is perfectly sweet without the sugar. Have it with a cup of tea for an afternoon snack or enjoy it as the perfect post-workout protein boost:)

    Goji Berry Protein Bars

    • 1/2 cup raw cashews
    • 1/2 cup raw walnuts
    • 2 Tbsp’s Raw honey (melted)
    • 1/4-1/3 cup melted coconut oil
    • 1/4 cup dried goji berries
    • 1/4 cup shredded coconut
    • 1 scoop vanilla protein powder (I use nuzest– use KATZ15 at checkout for 15% off!)

    Put the cashews and walnuts in a food processor and blend until mostly fine and a tad bit chunky. Pour the nut mixture in a bowl, add the rest of the ingredients, and stir until the mixture sticks together nicely (you can add more coconut oil or water until the mixture sticks together nicely). Lay out on a baking tray (covered in a cookie sheet) and put in the freezer. Remove after about an hour, cut into squares, and enjoy! Store the bars in the fridge and remove right before eating
