The Benefits of Fennel + A Refreshing Fennel Salad Recipe

As you probably already know, salads are a huge part of my diet and lifestyle. I have a salad for lunch almost every day and always have a side salad with my dinner. Friday night dinners (aka shabbat dinners) are super important in my household and they always include a variety of different salads. This fennel salad is a staple in my household, especially on Friday nights!

Fennel is great for so many reasons. It is an extremely high source of Vitamin C, Fiber, Potassium, Manganese and Molybdenum. It is extremely high in certain phytonutrients, such as anethole, rutin, and quercitin, which are all known to prevent inflammation and cancer. Since it is very high in Vitamin C and antioxidants, it is a great immune boosting veggie. As well, it has been shown to help regulate hormones and menstruation, reduce the risk of heart disease, and provide relief from constipation. Fennel is also great for proper digestion, since the fennel seeds help stimulate secretion of digestive and gastric juices that help properly absorb nutrients from food. If you are having any digestive problems, eating fennel with your meal is a great way to help combat this, and adding this salad to your diet is a great way to start!

I used to hate the taste of fennel when I was younger, but the more I started to experiment with it, the more I grew to love it. Munching on this salad is definitely my favorite way to enjoy fennel since it is super healthy and refreshing. The addition of healthy fats, cilantro and pomegranate seeds makes this salad the perfect immune boosting, brain loving, detoxifying, and cancer fighting salad. Refreshing Fennel Salad

  • 1 fennel bulb
  • 1/4 cup pomegranate seeds
  • 1 avocado, thinly sliced
  • a handful of fresh cilantro, chopped
  • 2 Tbsp’s olive oil
  • 3-4 Tbsp’s fresh squeezed lemon juice
  • salt and pepper to taste
  • a dash of turmeric (optional)

Simply slice the fennel into long, thin pieces and place it in a bowl. Add in sliced avocado, pomegranate seeds, chopped cilantro, olive oil, lemon juice, salt, pepper and mix! I love adding in a dash of turmeric for an extra boost of anti- cancer and anti-inflammation, but the choice is up to you.
