Healthy Szechuan Green Beans

I’m a sucker for Szechuan Green Beans, but most of the time they are soaked in heavy sauces with way too much sugar and fat. I decided to make my own healthier version this week, and I served them with some grilled ahi tuna and roasted potatoes. I am so obsessed with this side dish that I could eat the whole pan all by myself in one sitting! I hope you guys enjoy it as much as I do- let me know in the comments below:)

Recipe

  • 1/2 package green beans, cut and trimmed
  • 2 cloves garlic, minced
  • 1/4-1/3 cup water
  • 1-2 tbsp.’s sesame oil
  • 2 tbsp.’s tamari soy sauce
  • sprinkle of coconut sugar
  • salt and pepper to taste
  • sprinkle of chili flakes (optional)

First, cook the green beans in some water to let them soften. Then add in the oil, soy sauce, garlic, salt, and pepper and sauté for about 5 minutes. Add in the sprinkle of coconut sugar and let cook for a few more minutes. Top with chili flakes if you like it spicy!
